The traditional vines, vinified in total pureness or grapes with well-defined percentages are the bone structure of the Novarese lands.
The Province of Novara can offer 11 different types of wine bearing the "vino di qualità" (quality wine) mark: the controlled and guaranteed denomination of origin (DOCG) Ghemme, the Controlled Denominations of Origin (DOC) Boca, Fara and Sizzano and other seven types of wine grouped under the denomination Colline Novaresi (White, Red, Nebbiolo, Uva Rara, Vespolina, Croatina, Barbera).
| Ghemme D.O.C.G. Garnet-red coloured wine with a characteristic and pleasantly refined fragrance, dry, savoury and harmonious flavour. Serving temperature 18°-20°C, 12% alcoholic content Boca D.O.C. Bright ruby-red coloured wine with shades of garnet, pleasant violet fragrance, dry, savoury and full-bodied flavour. Serving temperature 18°-20°C, 12% alcoholic content. Fara D.O.C. Ruby-red coloured wine with a refined violet fragrance, dry, savoury and harmonious flavour. Serving temperature 18°-20°C, 12% alcoholic content. GRAPES: Nebbiolo, Uva Rara, Vespolina Recommended with: first courses, red meats, game Sizzano D.O.C. Ruby-red coloured wine with garnet tints, a characteristic and pleasantly refined fragrance, dry, savoury and harmonious flavour. Serving temperature 18°-20°C, 12% alcoholic content. GRAPES: Nebbiolo, Uva Rara, Vespolina Recommended with: first courses, red meats, game Colline Novaresi Barbera D.O.C. Ruby-red coloured wine with vinous fragrance, dry and occasionally lively flavour. Serving temperature 18°-20°C, 11% alcoholic content. Colline Novaresi Uva Rara (Bonarda) D.O.C. Ruby-red coloured wine with a fresh vineous fragrance, harmonious and occasionally lively flavour. Serving temperature 18°-20°C, 11% alcoholic content. GRAPES: Uva Rara (min. 85%) Recommended with: cold cuts, first courses, red meats, cheeses Colline Novaresi Croatina D.O.C. Garnet-red coloured wine with an intense vineous fragrance and dry flavour. Serving temperature 18°-20°C, 11% alcoholic content. GRAPES: Croatina (min. 85%) Recommended with: cold cuts, roasted meats, aged cheeses Colline Novaresi D.O.C. Characterized by a more or less deep red, intense fragrance, dry and harmonious flavour. Serving temperature 18°-20°C, 11% alcoholic content. Recommended with: cold cuts, first courses, roasted and boiled meats Colline Novaresi Nebbiolo (spanna) D.O.C. Characterized by a more or less deep red, occasionally rose-coloured, with an intense and characteristic fragrance, harmonious and typical flavour. Serving temperature 18°-20°C, 11% alcoholic content. GRAPES: Nebbiolo (Spanna) (min. 85%) Recommended with: cold cuts, roasted meats, aged cheeses Colline Novaresi Bianco D.O.C. Characterized by more or less straw-coloured tints, a fragrant and delicate flavour, slightly bitterish taste, occasionally lively. Serving temperature 18°-20°C, 11% alcoholic content.
